Our Facebook Recipe of the Week !! (revised from mum what’s for dinner).
Slice your cucumber into long thick slices (1 inch thick). Remove the core from tomatoes and slice remainder into long thin strips. In each Cucumber add 1 tsp herb cashew cheese, a basil leaf or sprig of fresh dill and a long thin slice of tomato.
To make the Herb Cheese blend all ingredients in food processor.
2 cups cashews, 1/4-1/2 cup filtered water (depending on desired consistency – add slowly while blending all other ingredients), 1 tsp celtic sea salt, 1 tbsp freshly squeezed lemon juice, 1 chopped green capsicum, 1 tbsp chopped parsley, 4 basil leaves chopped finely, 4 fresh thyme leaves chopped, 2-3 fresh oregano leaves chopped, 2 tbsp nutritional yeast flakes.
